Im Bundesstaat Jalisco ziehen sich endlos die Agavenfelder und als Tequila bezeichnet man heute den aus dieser Region stammenden Agavenschnaps. Der Name ist keine Bezeichnung für eine Getränkesorte, sondern ein Markenname. Die Länge der Lagerzeit bestimmt die Qualität: Der junge weißliche Tequila wird nur ein paar Monate in Eichenfässern gelagert und eignet sich ausgezeichnet für Cocktails (Margarita, Tequila Sunrise). Ein im Eichenfass gereifter Tequila (reposado oder anejo), erkennbar an seinem goldener Schimmer und samtig weich, kann sich mit einem Cognac messen. Tequila hat in der Regel zwischen 40 und 45 Vol.-% Alkohol. -
